Often hailing from the Caribbean, rum is made by fermenting sugarcane molasses, and is usually aged in oak barrels for depth of flavour. More versatile than you might think, rum can be light or dark - the lighter stuff is fantastic in cocktails, whereas the more refined, aged dark rums are perfect for drinking neat…a far cry from the grog handed to sailors at sea!
